Dairy free coconut milk and passionfruit pana cotta

How can you make a dessert for guests who are allergic to dairy products? I know a few tricks because I was allergic to milk … You can use milk alternatives such as soy milk whose taste disappears when cooked, almond milk (very fragrant), rice milk, oat milk (rich in fiber), and of course coconut milk. I do not like cooking desserts because I hate to follow recipes to the letter, but I improvised this panna cotta without knowing what it was going to end up tasting like, and it turns out it was delicious. What is nice is that we really feel like we’re eating dairy creamy while it does not contain any!

The Ingredients (for 6 large glasses)

– 650 ml of coconut milk
– 10 passion fruits
– 3 sheets of gelatin
– 1 tbsp cornstarch
– 1 orange
– 100g sugar
– 1 vanilla pod

The Recipe

  1. Soak the gelatine in a bowl of cold water.
  2. Heat the coconut milk and 50g sugar. Cut the vanilla bean into two and scrape it into the milk. Once it begins to boil, turn off the heat, add the drained gelatine and stir.
  3. Pour the mixture into glasses, once they’re cool, refrigerate for several hours (or freezer if you’re in a hurry).
  4. Cut the passion fruits in two, get the seeds and juice in a saucepan. Add the orange juice, the remaining 50g sugar and bring to boil.
  5. Add the cornflour mixed with water and stir.
  6. Once the pannacotta is firm, place the fruit coulis over and put in refrigerator for another hour.

Pistachio biscuits for Valentine’s day

 I got this cute stamp for my birthday so I was eager to use it to make love cookies with the pistachio paste that was left of the king cake (it can be helf up to 6 months in the fridge). For the small hearts, I used a potato just like we did in kindergarten!

The Ingredients (for about 30 biscuits)

– 210g of flour
– 2 to 3 tablespoons pistachio paste
– 1 egg
– 80g sugar
– 3 tablespoons ground almonds

The Recipe

  1. Mix all ingredients, knead the dough. 
  2. Put 1 hour in the refrigerator, then spread it with a rolling pin on a greaseproof paper.
  3. Cut your cookies using cookie cutters.
  4. Preheat the oven to 180˚C and bake for 10-12 minutes.

This year, the famous fashion luxury brand Chloé celebrates its 60 years of creation, and collaborates for the occasion with the original pastry chef duo Hugo & Victor. Hugues Pouget and Sylvain Blanc were inspired by the iconic accessories of the brand like the Pineapple tshirt created by Stella Mc Cartney, the Karl Lagerfeld pouch or the pattern on the Galaxy dress. Exclusively at Printemps.


Sholten & Baijings

Sholten & Baijings, it is a true love story. A few years ago, I first got hooked on this amazing plaid, which never reached my couch because of its high price, I could only afford the cushions. Then, during a trip to Copenhagen, I discovered the sublime brand Hay, for which the designers collaborated regularly. Their tea towels can be found in my kitchen, and the linens on my bed (not to mention many other cool objects from Hay which joined my collection)… Anyway, I am deeply fan of their work and their delicate objects, their search for pure forms and color palette.

Here are some of their projects related to food and product design. The first one is a collaboration (2012) with one of the oldest porcelain factory Japanese 1616 / Arita. For this collection, Scholten & Baijings developed a color analysis involving historical masterpieces and worked on typical Japanese colors.

The second project dates back to 2009 and is more artistic, it is realistic vegetables made out of fabric and produced for their retrospective for the Vivid Gallery in Rotterdam.

And the last project which is also the newest and which was presented at Maison & Objet, is also a project for Hay that will be available in May. The duo has created crystal glasses decorated with patterns and color gradients, as part of their sleek and colorful style that I love so much!
