Gluten free strawberry cake

For my birthday, I asked my pastry chef friend Fabien help me make a strawberry cake that we call in France fraisier. He gave me a great recipe that had developed inspired by sponge cakes. It was long and tedious to make, but absolutely delicious! 

The Ingredients
– 500g strawberries
– 500g whipping cream
– 200g white chocolate
– 8g of gelatin
for the genoise 
– 10 eggs
– 150g sugar
– 166g rice flour
– 100g heavy cream
– 3 vanilla pods
The Recipe
  1. Mount the yolks with half the sugar and 2 vanilla pods (which you have collected seeds from) into a sabayon (beat in a bain marie).
  2. Whip up the egg whites and remaining sugar.
  3. Pour the whites into the yolks gently, then add the flour little by little.
  4. Mix quickly but gently.
  5. Bake in a round cake pan for about 15 min at 180 degrees (T6), but check with a knife to see if it is cooked enough.
  6. Slowly melt the white chocolate (be careful it can burn quickly).
  7. Add 100g of hot cream inside with the last vanilla.
  8. Then add the remaining cream and gelatin. Let it cool for a few hours or even overnight.
  9. Once cooled, cut the cake into two by sawing, lay a hand on it to rotate so as not to destroy it (an art!).
  10. Place the first genoise in a round cake pan, place the strawberries upright or lying down then the cream that you have previously mounted with a whip. Close with the other sponge.
  11. For the top, you can make a marzipan, icing or like me a gelatin with a strawberry juice (300g strawberries + 50g sugar + lemon juice + 3 sheets of gelatin).

Some time ago,  I was invited to discover the teahouse Georges Cannon, whose shop is located in a charming street in the 6th arrondissement. Of course you can find hundreds of green, black or flavored teas (some are even organic or fair trade), but you can also have lunch or brunch (with tea inside every meal!), or even get a massage at the spa, or attend tea ceremonies in a traditional wood teahouse.
The story of George Cannon goes back to 1898, when Mr. Cannon, an Englishman married to a French lady, founded his company of high quality tea. Since the 1970s, the Scala family took over the brand, and always travels to India and Asia in search of unusual plants, also developing fragrant tea with natural aromas.

Rhubarb, ginger and apple crumble

I love crumbles, it’s the simplest and quicker recipe on the earth of desserts, and you can put anything you want it… The apple rhubarb ginger combination is gorgeous!

The Ingredients
– 2 apples

– a few stalks of rhubarb
– 1 big piece of fresh ginger
– 150g flour
– 75g salted butter
– 100g sugar

The Recipe

  1. In a bowl, mix the flour with the sugar, then add the butter. Knead it well until it becomes “sandy”. 
  2. Wash and peel the rhubarb. Marinate an hour with a little sugar.
  3. Cut the apples into pieces. Grate the ginger.
  4. Butter a mold, pour the apples, the rhubarb cut in strips, and pour the mixture over.
  5. Bake for 35 minutes at thermostat 6 (180°C).


Filakia

I am a faithful customer of Filakia since their opening a few months ago… They make those delicate souvlakis (Greek pitas) topped with juicy grilled chicken, pork, beef cheek, lamb or sot-y-leash. The lemon potatoes are as delicious as the fries or salad of the day, the sauce drips all over our fingers and we love it. The desserts are also a real treat: the crumble is almost as good as mine, and the cheesecake is just a-ma-zing ; all at an unbeatable price!
