Eggplant and sesame udon

The Ingredients (for 2)

– udon noodles
– 1 eggplant
– 2 tbsp sesame oil
– 2 tbsp sesame grains
– fresh coriander
– 1tbs miso paste
– 2 tbsp soy sauce
 
The Recipe
  1. Cook your udon noodles in boiling water with the miso paste in it.
  2. Cut the eggplant into small cubes. Bake them into a pan with the sesame oil until they become soft.
  3. Add the soy sauce, sesame grains and coriander.
  4. Mix the noodles in and serve right away.
