There is something very awkward and quite fascinating about my memory : I remember almost every single meal I have eaten since my childhood. Name a place, a date, a meeting, a restaurant, I’ll name the meal we had. This is why the other day I remembered that 6 ou 7 years ago, in Sydney, Australia, Bondi Beach, I tasted this exquisite and yet simple salad. Thus I tried to create and put a piece of a dream into form. It had a lot of success.
The Ingredients (for a very big salad like this one)
– a big pack of spinach salad (350 g)
– 3 sweet potatoes
– herbs (rosmarin, thyme, cumin)
– goat cheese (1 standard box)
– pine nuts
The Recipe
- Cut the potatoes into cubes. Put them into a dish, sprinkle with olive oil and herbs, salt and pepper.
- Bake for about 40 minutes at 180℃, depending of your oven…Let it become crispy.
- Bake the pine nuts into a pan, until they become slightly brown.
- Mix all the ingredients, with the salad and the goat cheese.
- Add your favorite dressing (mine was just simple olive oil and balsamic vinegar).
