The Ingredients (for 2)
– udon noodles
– 1 eggplant
– 2 tbsp sesame oil
– 2 tbsp sesame grains
– fresh coriander
– 1tbs miso paste
– 2 tbsp soy sauce
The Recipe
- Cook your udon noodles in boiling water with the miso paste in it.
- Cut the eggplant into small cubes. Bake them into a pan with the sesame oil until they become soft.
- Add the soy sauce, sesame grains and coriander.
- Mix the noodles in and serve right away.

A few weeks ago had these Udongnoodles the first time. Totally new noodle experience. So, Im happy for every new recipe with these thick tasty noodles. I will try yours for sure.
I love Udon Noodles and make it often with vegetables in it! It is quick, and healthy. I had not made it with eggplant so this gives me a reason to make it again soon!
