I finally discovered Abri, on a sweet summer day, before I got my four teeth out (one comforting as can be). In a wooded space narrow as a handkerchief recalling some Japanese isakayas, chef Katsuaki Okiyama, behind his opened counter, prepares perfect dishes full of that Japanese delicacy. Whether it’s the asparagus and Comté cream with crumble and clovers, or that sweet potato soup and verbena espuma, or even that cooked to perfection-prime cut beef accompanied by caramelized onions and turnips, everything is simply refined and delicious.

Voici une sélection de quelques boissons, certaines sont 100% made in France et d’autres viennent d’apparaître dans nos étals! Je les ai toutes goûtées pour vous :
Here is a selection of drinks, some are 100% made in France and other just appeared in our stalls! I have tasted them all for you:

Vikwal : Urmas s’est inspiré d’une recette de sa grand-mère estonienne pour créer cette boisson à base de yaourt, de fibres et de fruits, so healthy! On y trouve des mélanges savoureux comme la mangue carotte passion vitamines solaires ou framboise poire antioxydants des vikings!
Urmas was inspired by a recipe from his Estonian grandmother to create this smoothie with yoghurt, fiber and fruits, so healthy! There are tasty blends like passion carrot mango solar vitamins or Viking antioxidants with pear and raspberry!

Ouiz : L’enchanteur d’eau! Une sorte de sirop aux arômes naturel en version nomade, il transforme un verre d’eau en un coup de pression, en une eau colorée et aromatisée (menthe glaciale, pomme verte, pamplemousse rose,…)
The water enhancer! A kind of syrup with natural aromas, turning a glass of water in a colorful and flavored drink (icy mint, green apple, pink grapefruit, …)

Infusion : les tisanes fraîches 100% bios made in France, aux mélanges de plantes, de jus de fruits et d’eau pure (pêche verveine citron, pomme poire bardane pissenlit origan citron vert,…)
fresh 100% organic herbal teas made in France, mixtures of plants, fruits and pure water juice (lemon verbena peach lemon, apple pear lemon oregano burdock dandelion …)

Bionade : de l’eau et des fruits, le tout made in Germany! Ils ont même sorti leur version cola.

Found : aux Etats-Unis, je peux passer des heures dans les supermarchés à regarder leurs rayons remplis de multitude de boissons différentes. Avec un chouette packaging et identité graphique, la marque Found propose des jus mais aussi des eaux infusées (concombre menthe, fleur de sureau, pêche cannelle)
When I’m in the United States, I can spend hours in the supermarket looking at their different drinks. With a cool packaging and graphic identity, the brand Found proposes juices but also infused waters (mint cucumber, elderflower, cinnamon and peach)

Borderline : des fruits alsaciens mariés à des épices pour des saveurs originales (fraise goyave violette, mangue citron vert verveine,…)

Umeshu shiso cocktail

My dear friends Lionel and Paul, lovers of Japanese cuisine – and who cook divinely – made me discover this cocktail. I just changed a few things, but you can just serve a very fresh umeshu, a Japanese plum alcohol, with a bit of shiso (a Japanese herb often served with sushi, which has a very strong taste) and orange peel.

The Ingredients (for 1 drink)
– 1 shot of vodka
– 1 glass of umeshu
– 1 shiso leaf
– 1 organic orange peel or piece
– a few drops of yuzu juice (optional)
– a few drops of Angostura bitters (optional)

The Recipe
Mix it with the finely chopped shiso, orange and fresh umeshu. You can also add a few ice cubes, it tastes even better!


Lemon!

Je me sens d’une inspiration fraîche et acidulée, allez, mettons un peu de couleur dans nos placards lugubres d’hiver, et un peu de peps dans nos assiettes avec cette sélection autour du citron!
I feel a fresh and tangy inspiration, come on, let’s put a little bit of color in our dreary winter wardrobes, and some sparkle in our plates with this selection on the lemon theme!

Kale salad

I discovered kale in the United States, they love it there, they prepare it in thousands of ways: salads, soups, detox juices or even tempura (a killer). It is an ancient variety of cabbage, filled with anti-oxidants, vitamins A and C (more than orange) and calcium (more than a glass of milk!). It’s hard to find in France though it’s starting to appear in some cooperatives, in certain markets or in some organic food stores. 
The Ingredients
– 1 ripe pear
– A handful of almonds
– A handful of dried cranberries
– Ten sheets kale
The Recipe (super easy!) 
  1. Remove the tips of the leaves, cut finely or coarsely as desired.
  2. Cut the pear into slices, fry the almonds and mix well everything in a salad bowl.
  3. You can season it with mustard vinaigrette, made with a little sesame oil for example.
