Grilled eggplants salad

This salad could also be called the “I-put-all-the-things-I-had-left-in-my-fridge” salad. Well, when all you have left are a few cool ingredients, like some chive and tomatoes from my parent’s garden, it can be a nice surprise.
The Ingredients (pour 2/3 servings)
– 1 small purple eggplant
– 1 ou 2 tomatoes
– chive
– a dozen mushrooms
– 60g feta
– olive oil
– balsamic vinegar
– 1 garlic clove
– 1/2 lemon
The Recipe
  1. Grill the eggplant cut in slices with olive oil, garlic and balsamic vinegar. Add salt and pepper.
  2. Wash, peel and cut the mushrooms into slices. Place them in a salad bowl with the tomatoes cut in cubes, the feta and chive.
  3. Add the eggplants. Season with a leamon + olive oil vinaigrette.
  4. I wonder if I also put some grilled bacon…
