This salad could also be called the “I-put-all-the-things-I-had-left-in-my-fridge” salad. Well, when all you have left are a few cool ingredients, like some chive and tomatoes from my parent’s garden, it can be a nice surprise.
The Ingredients (pour 2/3 servings)
– 1 small purple eggplant
– 1 ou 2 tomatoes
– chive
– a dozen mushrooms
– 60g feta
– olive oil
– balsamic vinegar
– 1 garlic clove
– 1/2 lemon
The Recipe
- Grill the eggplant cut in slices with olive oil, garlic and balsamic vinegar. Add salt and pepper.
- Wash, peel and cut the mushrooms into slices. Place them in a salad bowl with the tomatoes cut in cubes, the feta and chive.
- Add the eggplants. Season with a leamon + olive oil vinaigrette.
- I wonder if I also put some grilled bacon…
