As simple as it is, we had those amazing langoustines with a home-made mayonnaise. Our friend Mies Van der Rohe said “less is more”, well that applies to cooking as well sometimes : )
The Ingredients
- 2 egg yolks
- 1 glass of olive oil
- 1 teaspoon of mustard
- salt, pepper
- for the aïoli version, add a crushed garlic clove
- for those who like it, you can also add some chives
The Recipe
- Boil a casserole with water and a stock cube.
- Put the langoustines in for about 3 minutes.
- Mix the mustard and egg yolks in a bowl.
- Add slowly the oil with a whisk or electric whisk until the mayonnaise is thick.
