Langoustines and their mayonnaise

As simple as it is, we had those amazing langoustines with a home-made mayonnaise. Our friend Mies Van der Rohe said “less is more”, well that applies to cooking as well sometimes : )

The Ingredients

  • 2 egg yolks
  • 1 glass of olive oil
  • 1 teaspoon of mustard
  • salt, pepper
  • for the aïoli version, add a crushed garlic clove
  • for those who like it, you can also add some chives
The Recipe
  1. Boil a casserole with water and a stock cube.
  2. Put the langoustines in for about 3 minutes.
  3. Mix the mustard and egg yolks in a bowl.
  4. Add slowly the oil with a whisk or electric whisk until the mayonnaise is thick.
