Eggplant spaguetti


The Ingredients (for 2)

– spaguettis
– 1 eggplant
– 1 garlic clove
– tomato sauce or fresh tomatoes (can’t wait for summer)
– rucola
– parmesan

The Recipe

  1. Brown the eggplant cut in cubes, with olive oil and the garlic, in a pan.
  2. Add the tomato sauce or tomatoes cut in cubes. Cook at low heat.
  3. Serve with rucola and parmesan shavings.
